Recipe - Egg less Homemade Ladi Pav Buns

Pav or Pao is essentially a little loaf of bread, presented by the Portuguese in India. industrially, Pav is constantly made with maida or generally useful flour. At home, we can make these little bread moves with entire wheat flour or different flours.



Ingredients:

3 Sugar 12 Gm
4 Salt 4 Gm
5 Water 110 Gm
6 Soft butter 10 Gm
7 Milk powder 5 Gm
8 Bread improver 2 Gm 
9 Gluten  4 Gm 
Method:

  • In a bowl mix yeast sugar and water.
  • Sieve all the dry ingredients together.
  • Bring mixture and dry ingredients together and knead on the work table.
  • When the dough is almost smooth add the oil and knead till the desired elasticity is achieved.
  • Bring the dough together and keep it in a bowl covered by a wet cloth for fermentation (also called first proofing.) for almost 30 minutes.
  • Knockback the dough and make 30g
  • portions, cover with wet cloth leave to rest(this is bench rest/2nd proofing) for 10 minutes.
  • Make roundels and place them close to each other in a rectangular frame and give final resting for a minimum 20 minutes
  • Bake at 210° Celcius for 12-18 minutes.
